Sunny Side Ups With Feta Cheese

I am not a morning rise and shine person. I prefer to be left alone for at least half an hour after waking up and I gradually and eventually become approachable and friendly. Preparing breakfast is not my favourite thing either; I like skipping it all together when I can. And thanks to my ignorance towards the most important meal of the day, Doğa had found the opportunity to master the perfect sunny side ups over the years. Now, even when I feel contributory, I pretend that I'm not, so I can sit down to a fully prepared breakfast table with these delicious sunny side ups. 


Don't underestimate this recipe thinking it's just eggs because frying eggs is indeed serious business. I don't remember for once ordering sunny side ups in a restaurant and getting them in a consistency as perfect as Doğa can make them. The trick with feta cheese is that it substitutes butter and salt, giving the eggs a creamier taste. Fresh herbs are key to upgrade any mediocre breakfast and here fresh oregano leaves complete the egg feast. Spicy red pepper flakes are recommended but not obligatory unless you are ready for a real kick to wake up in the morning, like me. Enjoy.

Sunny Side Ups with Toast Bread     

Sunny Side Ups With Feta Cheese


  • 1 or 2 free-range eggs per person
  • 20 g feta cheese per egg, grated
  • fresh oregano
  • red pepper flakes
  • salt and pepper to taste


  1. Soften a little more than half the graded feta cheese in the pan over medium heat. With the help of a spatula make space for the eggs. Break the eggs carefully in these spaces and let the whites mingle with the cheese while keeping the yolks intact.
  2. Cover the pan and let the eggs cook for 1 minute. Poke and spread the raw parts of egg whites with the spatula. Sprinkle the rest of the cheese on the egg whites. Add salt, pepper and red pepper flakes. Cover and cook for another minute.
  3. Check if egg whites are properly cooked and remove from heat. Sprinkle with fresh oregano leaves. Start dipping the yolks with toasted bread.
